I have a new position starting on Monday and this is one of the few tasks I am to be performing. How is this done?
I guess the Template here is refer to sheet format of a drawing
Right click in the graphic area of the drawing, Click Properties.
And select a different sheet format from the list.

The job posting describes the work to be done as follows:
"2 Months+ contractor needed for updating of existing drawings. No design involved in this position. Candidate will be taking existing documents, inserting a new template and reconnecting links, ensuring all previously existing links and information is still functioning properly."
When I read this, I made the assumption that this had to do with assemblies, but you could very well be right: that it pertains to the drawings.
Do you mean assembly drawing or model? Either way you can save the standard (Tools > Options > Document Properties > Drafting Standard) as an external file and then change on all files. I have made a macro that you can use to do a batch update of standards.
If you mean sheet format; then what Shaodun has suggested. Also there is macro to batch update that.
