This picture is a side profile view of a cradle we are creating. The dashed line (A) would be the hidden lines of a normal shell feature. Solid line (B) is where I would like for the shell to stop. Like a controlled shell feature. Is there a good way to go about doing this? Thanks in advance.
The shell feature only offers a second thickness and to remove faces so your best be might be to split the part using a plane where you wish the shell to stop, then shell that body as required (remembering to remove the face that is against the plane), then use the combine feature to bring both bodies back together afterwards
Jamie- I have have split the part and have done exactly what you said until the point of combining it back together. What is the best way about doing this? I dont have that option when working with 1/2 of the part, and when I put them back together in a assembly I dont have that option. Any ideas?

work within the part rather than the assembly, cut the part but don't save it as separate files (so you have two bodies in the same part), and ensure "consume cut bodies" is unchecked. then apply your shell only to the body you want, then you can use the combine feature to add them together to bring it back to a single body again
what version of solidworks are you running? I can send the above model to show the process if you are using 2015.
you could also use the join to bring them together if you have them as two parts in an assembly, in the help file search for joined parts and it will talk you through the process.

An alternative but similar approach to Jamie's would be to shell the full shape, then add a split line to the interior surface of the shell, then use surfacing commands to remove and patch faces forming back into a solid.
I have attached a SW2013 example.
