I have been learning to use Solidworks Electrical for a few weeks now and one of the things I haven't been able to do is increase the size of the page to give me more room as my schematics grow. Has anybody worked this out? Thanks.

So...um...maybe I'm misunderstanding your question, but when you need more room to draw schematics, you add more pages to your project. We use 11x17 pages, and typically will have schematics about 150-200 pages long or so.
If the default pages are just too small and you can't draw out a full circuit the way you want, you can create your own title block, specify what size paper it will be printed on, and then play around with the settings so it calculates the columns and rows properly.
