how replace multiple bolts
In 2015 you can RMB the bolt in question
select replace components
then tick the ALL INSTANCES check box
If you're wanting to change configurations for multiple bolts you can Ctrl+ select them, then change them with the drop-down you showed. You don't need to do it one at a time. If you mean changing it for a completely different part, then what Mike said will work. The Replace Components function has been around for quite a while.
I only mentioned 2015 specifically, as I couldn't remember if the check box for All Instances was a more recent enhancement to the replace components command.
The "All Instances" has been around for as long as I can remember.
Making sure it's not checked when you only want to replace a single instance is probably more important. I recall at one time (maybe still) it would switch every instance in every assembly you had open. That caused more than a couple of "Oops!" moments.
