As you can see in the attached image my BOM is kind of a mess. The numbering scheme is based on the order that I added them to the assembly. I've also deleted all of the fasteners that were in the assembly because I don't want them on the BOM. This leaves the numbering system with a lot of blanks.
What I would like to do is sort the BOM by p/n and then have the item No. match with the new number i.e. Item No 1 = 82491294-1, Item No 2 = 82491294-2 etc...
Is there a way to do this or is the perhaps a different method than what I listed that I should be using?

You can click and drag rows to re-arrange them. And if you have rows that you don't want to show, there are other options. One option is to go to the part in the tree in the assembly, right-click on it and choose the Component Properties... icon, and select Exclude from bill of materials (see below). If you don't want to do that, and still want to hide them directly in the BOM on your drawing, I'd recommend dragging the row to the bottom of the BOM first, and then Hide it instead of deleting. By dragging it to the bottom you won't have a gap in the numbers, and by hiding it instead of deleting it you can get it back later if you want.
