I have a design that is built. I've measured the deflection under load to be about 1/8". I would like to run a simulation with this amount of deflection and calculate the force required to make that bend. Is there a way to do this in SW Simulation?
Yes, you can do this. Instead of adding a force, you add a fixture with a prescribed displacement. Run the simulation and then use "list result force" -> "Reaction force" on the prescribed displacement fixture to get the required force (RMB on result folder for the submenu). See an example below on a 30x10x300 steel beam with 3 mm displacement. Result force 1569N:
I presume this would also work if you split the body perpendicular to where the displacement was measured and did the same thing to the resulting surfaces generated (with the two 'ends' bonded)?
I am still using solidworks 2012 - are the advanced fixture features available in this version? Can I perform deflection on my part and measure reaction forces?
Yes it is, and has been available for a long time allready.
