I want to break them into separate parts for the manufacturing floor.

You can right click on each of the weldment members, either on the model or in the structural member folder in the feature tree, and select 'insert into new part' to save them as individual parts. However, I believe that modifications such as holes etc must still be carried out in the weldment itself and not in the new part file. The part file is probably useful for creating fabrication drawings once the weldment is complete.

If you are looking to details them separately then you can then you can do that with the same part using the body option. Here is an old post in similar context: Detailing a Multibody Part
