I would like to add a Dim/Dim chamfer and then mirror it. Does anybody know how to do this with out having to edit all four chamfer individually? Why does the pink chamfer direction only work for angle/dim? Is it really that hard for SW to mirror this feature correct?

Venkatesh method is fine.
But does it, see images.
First one is dist/dist correctly applied.
Purple arrow to change directions on one of them.
Can you upload a sample of your part ? Only the Snap Hook is needed.

If using the angle distance chamfer, you can click on the purple arrow by the edge(s) you've selected in the graphics display to reverse it's direction. For the distance distance chamfer, this function is gone. The previously mentioned option of designing 1/2 of your part and mirroring it would work for you in this condition. Otherwise create a sketch and extrude-cut to accomplish this distance distance chamfer to get what you need.
My first image in previous post shows this correctly applied. Different behavior referring to what Niels showed, that´s why I wanted to have a look at his file.

STEPS:
1. Construct the part lies symmetry of the plane (or) Create an plane using an mid plane option so that the component lies symmetry of the created planes.
2. Apply chamfer at single edge.
3. Click "Mirror" command in "Feature Tab"
4. Select plane in "Mirror Face/Plane" Group.
5. Select "Chamfer" in "Feature to Mirror" Group.
6. In "Option" group "Tick" the "Geometry Pattern".
7. Click "oK" to exit the mirror command.
