I know how to move a sketch to another plane (RMC on sketch, LMC on "edit sketch plane" select the new plane you want.. But for some reason, I'm only able to select pre-created planes (Front, Top, Right). Why can't I select one of my created planes?

MOre than likely, the answer is that you created the planes after the sketch.
Either drag-and-drop the planes above the sketch (one at a time), or drag the sketch down below the plane you wish to switch it to.
You should also do tutorials on the feature manager so that you have a good understanding of history-based modelling.
