I have couple parts which were splited from a multi-body part
I changed both parts to a different colors but they kept chaning back to the default color each time I made an update
Anyone here has any idea what causes this behavior?

Don't be surprised if there is no observable cause for this behavior. "Appearances" has been broken since at least SW2006, and the only solution is often 1) reoloading the part, or 2) creating redundant appearances (e.g. on both part and face).
Andrew, although they may not be user-friendly at times, I would not say they're broken. With care, they have worked for most of us.
Chris - be sure that the assignments have been made at the correct "level". The hierarchy can get confusing depending on whether te appearance is applied to the part, assy, feature, face, etc. Also, when changing or assigning the appearance, be sure to choose the desired option - "this config, all configs, choose configs".

I like to use the "View Appearances" lists under the DisplayManager tab. I find it easier to see where appearances are assigned, add to an existing appearance, and to delete appearances. I was more often frustrated by appearances until I started controlling them there.
