whats the difference between 7 gage .179 and 3/16 .188 plate? i have stainless steel parts made from 304L. i wonder if i should be specifying .188 or 7 ga .179?
Need to ask yourself a couple of questions. Application and Cost. We use them interchangably. Out tolerance is not crucial. Both are readily available in our market. #7 GA is less expensive and really no more benefit to pay more for the plate.

I'm not sure there is any difference. I'd base the decision on what's readily available. Have your buyer do a stock check. Just by coincidence, I checked this exact material month and the .188 was readily available everywhere while the 7 gage was not available at all.
