How do I get TS to output a multi-sheet drawing to one dxf file?
And without the "__1" in the filename?

Set the DXF options to save multisheets as one files. For setting it up, go to File > Save as and pick the save as type as DXF. Now click on the option and choose the option.

I already have that button checked in SolidWorks which correctly outputs a multi-sheet drawing to a multi-sheet DXF. But when I use Task Scheduler, it outputs to separate files and with the __1, __2, __3 ... etc.
Is there a setting like this in T.S. or a global one in Solidworks which would carry over?
Bob sorry for my misunderstanding of your issue. I just checked and found that it is a feature of TS and can't be changed.

What you need can be done via a macro and I'm sure I made a macro to batch save drawings as DXF. Let me find it for you.

FYI: My email address set up in this forum is an old one which I cannot access anymore. Is there a way to change it? I didn't see any.
Here is the macro you can try.
For changing the email id or your profile information, you'll have to contact SolidWorks team. Go to your customer account and then click on My profile on right side. Then on the profile page click on the link listed "click here" and request the changes you need (check attached picture for clarity)
