I am amazed that one cannot simply specify x,y and z coordinates to located a point in an assembly in Solidworks!

Ditto on what Rico has said/suggested. Here is quick video to show that.
If you create a 3D sketch inside an assembly, once you place a sketch point, look in the feature tree, there is a parametre tab that appears for that specific point, where you are able to specify x,y,z coordinates for that point. Note they values are relative to the origin, and you can also give a negative value. is this what you were wanting to do?
