When I work on 1 part in the assembly, how do I change the view of other parts that surround it?
By default I see a wireframe of other parts but this isn't always an optimal way of seeng thing.
How do I switch that?
On the left side of your user interface, you should see the different parts you assembled together. Right click the part, component display, shaded (or any other views you would like).

Tarakan, the default shading is controlled by either the isolate or assembly visibility commands.
If you edit a component in the context of an assembly the visibility of everything except the component you're editing is controlled by this setting:
Maintain transparency won't change the opacity of the other parts,
force transparency will make the parts you aren't editing see-through.
How see-through the parts are is controlled by a slider in Options:System Options:Display/Selection in the Assembly transparency for in context edit panel.
Play with those settings and see if that helps.
What toolbar is this?
That's the assembly toolbar. The buttons are grayed out unless you're editing a part in context
