I would make the head before the neck, then do a loft between the body and head using the the start and end tangent options of the loft.
Thanks I'm not 100% sure if I've followed what you've said but I been able to loft the between the two circles however now the front face of the loft is inaccurate of a birds neck.
Ok here it goes.
you've built the body, skip the neck, build the solid head to where you want the neck to connect to the head, then loft between the body and the head, you can use guide curve to help the shape and the start\end of the loft to help with tangents to the bodies.

Everthing is good but the thickness of the neck coming up. The only way I think I can achieve this in one loft is a 3d Spine but it aint easy.
yes you correct SW and freeform shapes is time consuming. Rhino or Power Surfacing for SW is the way to go.
