Currently, when creating weldment cut-lists, the default material value is linked to the assigned material ("MATERIAL@@@<cut-list name>@<filename>". I'd like to change the default so that it is not linked to the integrated material feature in SolidWorks (i.e. just use a text string as the default). Is there a way to change this?

So there's two issues with that suggestion:
I know I can edit the material in the cutlist, but what I'm trying to do is change the default value so that I don't always have to edit the material (a lot of the time, we have detailed material specs in the drawing notes, so we references the notes using a blanket "SEE NOTES" value in the material column of the weldment BOM).

So you always fill "SEE NOTES" in the material property (of the part or cut-list items?)?
You can write some macro to do that, but there is some things to consider (for example, SolidWorks 2013 doen't let you change the Material property after you set a Material and it can be problematic in your case).
You can always hide the Material column of the cut-list / BOM tables in the drawings.

No, we don't always use "SEE NOTES", but it is there enough that the engineers requested this as the default. I wasn't aware of that behavior for SW 2013 (we're still on 2010 here).
Sally, open the weldment profile in it's own window (you can do that by right-clicking on the profile in the task pane) and add a custom property for material along with the text string that you want to include.
Alternatively, I believe you can edit the material string in the cutlist.
