Considering that we've been able to draw all piping for a complete Biogas installation, with over 100 underground piping runs, with most of those more then 100 meters long, including all fitting, valves and equipment + steelworks (stairs , piperacks and catwalks) + basic concrete (buildings)... I would think that one should be able to do lots of things.
As long as you don't have individual pipe runs that are kilometers long, there's no reason why you shouldn't be able to.
The latter would work as well but you might want to confer with your VAR about how to set things up.
Types of flanges in solidworks = types of flanges that exist and that you can find data for to model them in SW.
