I found a nice link showing step my step how to turn a multi body part into an assembly. However I tried this on a sheet metal weldment and found that the individual parts created are now only solid bodies and are not recognized as sheet metal any longer. Since all the components were created using lofted bends, I cannot easily convert the soild bodies back into sheet metal.
Any thoughts on the subject?

It depends on what method you used to turn the multi body sheet metal part into an assembly, but what you could try is making multiple configurations in your multibody part. http://help.solidworks.com/2011/English/SolidWorks/SWHelp_List.html?id=ff26ab22721f463e93499be51ce0b552#Pg0
Each configuration of the part will keep only one of the bodies and delete the others using "Delete Bodies".

Then, insert each configuration into the assembly, and mate.
This way, the parts stay as sheet metal, and you don't have to worry about converting anything.
