Can someone tell me how to change the Create date in solidworks project file?

What exactly you looking to change? Do you mean create date under File > Properties or something else? Please elaborate with some sample files/pictures.

Do a file save as into a different directory and then through windows explorer move it back into the
original directory and over write the original.

But your method doesn't worked for me
I've tried to Make an assembly from part file, and then re-save it to part format again, the date changes but in library there's no part making history, only a full part. Sorry for bad english.
That might be possible use DSOfile option in windows but I'm not sure. Are you a student??

Even if you change the date, there are other ways to get the start date info. So better to admit the right thing rather get into trouble.

I understand you situation in what you are trying to do, but if you don't mind me asking,
why do you need the date changed? Are you a student and the project is late?

and start your next project earlier. Doesn't sound like you are late, so do what you can.
