I Know this is probably a fairly simple one but i can't the button. How do you alter an assembly's display-state, when it's inside another inside another assembly (or is is a function of the way it's imported without the ablility to edit after?

What version are you using?
In SW2011 SP2.0 I think there is a bug - Assembly display states only work if the sub-assembly is set to the desired display state.
Here are two ways to change the display state:
You can RMB click the sub-assembly select properties and select the display state.
You can use the FM fly out (at the top of the FM) then RMB click over the display mode next to the component and select the component display state.
Unfortunately the component does not change, but the FM shows that the display state name has been changed (assuming that the FM options have been set to show this information).
Just click on the arrows at the top of the feature manager
and then you will see this. This is where you can alter the display states of the sub assemblies.
