I'm not sure how to uncheck them all during Pack and Go but you can initially suppress the toolbox parts in the assembly and then do Pack and Go.

Another similar pack & go trick: If you put linked pdfs and such into the design binder, you can gather all of them easily.
Search for "Type" and put in "solidworks" and "uncheck all" them. Only design binder content remains. Copy them all to a folder to make the product manual! Unfortunately this does not work from windows explorer pack & go, the assembly has to be loaded up.

In pack & go, "Select/Replace..." button, search "In Folder" and put in part of your toolbox path, such as "\toolbox parts" Pick "Uncheck Item(s)", and then "Uncheck All".
