Flow works animated cut plot?

I saw a video on youtube, with air velocity made for a bikerman:

How can I do this? I think this is a Cut plot? But when I animate my Cut plot, I get the plane that moves back and forth.

And I want it to be static, and show the movement of air velocity like it is on the above showed youtube video.

How to do this?
