It seems no matter which template I use I cannot get the Description column in my Excel file to generate like the other columns. What am I missing here, please?
Are you using the Excel table or the SW BOM table?
Can you post your file or images? What does your text string look like?
I have been using the SW BOM and then save it as an excel file but, today I havn't been able to build anything...
So what you are saying is if you double click on the header of the description
column you are getting nothing?

Actually, what I am saying is that I can't get the BOM tool to work at all, right now. Can't even zoom or edit my current drawing when opening it.
What version of SW and SP are you running?
Can you post this file? Is it only happening with this file or others as well?

Not exactly. I have managed to get a table made and have made a screenshot for you. As you can see, the drawing names have populated, but the Description colum is blank. Shouldn't that populate too just like the drawing file names did?
Yes it should assuming that you have values filled in for each of the parts
for that specific custom property called "Description" .
Are you using the SW description property or did you create your own?
I am not quite sure as I inherited these drawings from another designer when my customer contacted me to take over the project. Where would I check to determine if the SW description property was used?
Pull up one of the parts and go to file>properties and under the custom tab is the list
of custom properties. If there are configurations then also look under the configuration
specific tab. This tab specfies properties that are different between configs.
See what property they are using for the description.

I have had the same issue when I upgraded to 2011, except my Qty, Part Number, Description comes in, but we have additional fields that we use and those don't come in. I set it up in my 2004 copy and it worked well, but as soon as I changed over to 2011 is when I had the issues.
I think I went through all the steps in creating the BOM and saving it. There was one thing that I thought may have happened and that is I had a folder where my BOM's were saved, so I thought that might be part of the issue.
I hardly ever used the SW generated BOM as I almost always had used the Excel BOM instead. The reason I like the Excel better is that I can copy the BOM after I am done with the assembly and sort by raw material used so it is easier for the shop guys. I put all the Sheet Stock, Flats/Steel Shapes and purchased items/hardware in their own category.
Keep in mind that when you do this the copied Excel BOM does not up-date automatically, however for me I will settle for that verses using the SW BOM,
