I have a somewhat large assembly with each subassembly Speed Packed. Is there a way to get rid of the "x-ray" circle veiwer when looking at the top level assembly?

I think the "x-ray" viewer prevents selection of anything not included in the speed pack. If you need to select the excluded components and faces, you will need to use a non-speed packed configuration, or re-define what is included in the speed pack.
I understand not being able to select it but I would like to be able to view the assembly as if it were not speed packed ie. just removing the "x-ray" circle. Also I wish there were a way to have the subassemblies automatically update rather than having to go into each and update the assembly.

Yes there is a way to disable the ghosting effect on mouseover. On the configurationmanager tab, when you add a new speedpak (and I assume edit an existing one) there should be a checkbox at the bottom that says remove ghost. You want that turned on.
