So I'm having several model imported of late and find myself strugglin to repair gaps and faces from *.stp files. Any suggestions?

I would look into surfacing. Look at the tutorials on surfacing
because they have tools that fill gaps.
I think due to the surfaces being imported it's not giving me the option to select "Fill". Maybe I'm missing something?
I try healing the surfaces with the import diagnostics, but sometimes there's just too much going on and SW throws in the towel .
It's the manual repair I probably am failing at.
You might have to fake the software out meaning, offset an existing surface
at a zero distance and use those surfaces to mend.
Or try feature works and let the system do the work.
You are right. Make sure you dedicate some time to learn the surfacing tools, especially if you get a lot of files like those from your customers.
Strongly suggest either enrolling in a surface modeling class (2 days) or buying Matt Lombard's book: http://www.amazon.com/SolidWorks-Surfacing-Complex-Shape-Modeling/dp/0470258233 or both.

Also check out Ed's "Surfacing for Blockheads" on the same site, as it may be useful as well.
Mark Biasotti gave a presentation at this year's SW World on import/export. If/when that becomes available, you will probaby find it very helpful. (I wasn't able to attend due to too many good presentations at the same time.)
When import diagnostics doesn't fix a face, try the "delete face" tool. Make sure to select the middle option "Delete and Patch". This tool works well with imported bodies, and tries to recreate the face.
If that doesn't work you probably have to hand-recreate it.
Your best option is to try and get a better source file. Can you ask whomever is sending you the files to increase the resolution (tighter tolerance) of the .stp file before they send it?
