Wondering if there's a way in an exploded view to create a step single step which includes 2 components exploding in opposite directions to one another.

Nope ! Exploding the components in the animation is pretty easy.
1) Move the components in the assembly the way you want it.
2) Open motion study and use the wizard to capture the whole explode from the assembly.
3) A key would be assigned to move the components across the time bar.
4) Change the start and end timings on right clicking the key and assign the timings.
5) Press calculate and your animation is ready !

Unfortunately this would not be possible. Any move of a component is considered as a individual step for explode.
But, I am also curious to know why would you have to move both the components in a single step ? is it to show in the animation ? If that's the case we can move both the components at the same time in opposite directions.
We may have to assign the same start and end timings to move the the components at the same time but in opposite directions.

Yea its more for the animation side of things..although my knowledge of the animator is pretty limited and i'm yet to invest much time into it. Sounds good about being able to do it in the animation editor but does that mean I have to create the whole exploded view in the animator instead of using the exploded view i've created in the assembly?
I'll hopefully get a chance to try this out today and let you know how I get on!
You may also use the distance/angle mates and control the movement in animation
