EPDM Currently Supports only Variables which are listed default in the word document. This is a known issue.
Workaround: Save the word file in to .rtf and check. This worked for me.

I am confused then. Non of the variables that are actually working are defaults in word. They are all done as customproperty per the variable mapping section (pg 334) of the admin guide. This was also taught in the solidworks admin training class
I was working with John Travis of CaddEdge this am and found out that the problem I was having with some of the variables was because the attribute name wasn't the same as the variable name. Once this was fixed all of the variables now show in the word document
The variables must be writing to the CustomProperty block in EPDM. To find them in Word 2007, go to Insert>Quick Parts> Field and then select DocProperty. There will be a list of all of the document properties written to the CustomProperty block. The update the fields, I copied the auto update macro that's in the user guide of EPDM that updates all fields in a document each time it is opened.
