Actually it's View>Hide all types. and Un-check Display Annotations in Annotation.

This is the trick.
Even though the parts were saved with sketches closed and dimensions hidden, the sketch dimensions bled into the assembly.
There are two places where feature dimension showing is controlled.
You can go to View->All Annotations (or something like that) to hide all dimensions in all parts in an assembly, regardless of whether they are shown in the part or not.
In the partsf(not the assemblies) RMB on the Annotations folder and un-check "Feature Dimensions". This setting "bleeds up" into the assembly unless the assembly has the above setting turned off.
