To insert your company name, just right click on the sheet and select 'edit sheet format.' Then simply double click the text and type your company name.
For your other question, in my experience, the drawing formats need to be re-inserted to the individual drawings. There may be some great SolidWorks secret to take care of this issue and I wish I knew what it was because I am constantly updating my formats.
1. right click on drawing and go for edit sheet format. Once u go into that u can edit all notes. Imp. Don't forget to save sheet format. It will be be helpful in making new drawings later.
2. I believe u can edit text with ur language but u need to have that text font in ur tet editor.
3. U can use macro for changing sheets in all drawings. see attachment. U can tweek up macro for ur rquirment of sheet sizes and scale.( all properties are copied in last pages)

thats a nice bit of code there - is there some where that lists the different sizes? i.e. 0 = a size landscape, but what is a size portait?

It appears Change_Sheet_Format was created in SW2009 and TemplateSwitch will work on older versions.
