I tried to replicate this work, but couldn't. How to fix it?
What's New in SOLIDWORKS 2020 - Surface Offset
The part does look slightly different than the video, where did you download it from?
I model it. Here is the original file.
The rib in the middle of their part is all together a separate face and that is why yours is failing to offset even the two larger halves. You have your rib blending into the halves. If you pause the video at 0:26, you will see the tangent edges of their model displayed. These do not match yours and it means that a different approach was taken to model the initial part.
You have a much higher level of curvature, which is creating faces that are too complex. You will need to use tangent conditions and circular profiles.
..your model looks different (recess size and scale (thicken) from the video model.
..and, with most of these SW Corp videos.. they are "canned".. to show it working.. and in your case.. your model will NOT do as they are showing.. you would need to manually offset surfaces and trim/solidify.
Applying trim in one location is closing the opening in other location. How to fix it?
I had the chance to use this last week. I started off in the Shell command, and SW suggested I move to the Offset command, where it identifies the faces that won't go, and allows you to do the offset without them. Then I manually modeled the missing faces, knit, and cut with the resulting surface. Works like a charm.
If you do not mind upload the file please.
