I'm using a Hex Washer Head (10-32) for clamping the shaft.
I have worked this exact problem, on jobs from small handles to large rug poles (for carpet warehouse lift trucks).
You need some idea of the available friction and needed holding force. The holding force we can calculate in simulation, but may have to iterate to get a specific value.. In this case it will be a direct function of the clamping bolt torque, so just a few runs will be needed to chart a trend.
I set up the model literally, with a solid shaft in contact, and use the bolt connector to apply clamping torque.
This result is with 5 ft-lb torque and .002 clearance to the shaft. Clamp force is 115 lb per side.
