Hello. Can we plot the v-t graph of a point in the assembly using SW motion analysis? For example the point could be a point x mm away from the end of a rotating stick fixed at the other end.

Yes, you can absolutely plot velocity versus time of a point (or vertex) on the model. This is part of the Motion Study Plot functionality included with Motion (SOLIDWORKS - Plotting the Linear Displacement, Velocity, or Acceleration of a Part). I put together a small model with a hole in it, mated it to an axis, attached a rotary motor to it so spin it and got this plot out of it.

Right clicking directly on the plot will give you an option to export a CSV file of the data points:
