For those running SW 2020 (I think it's at SP1 now?); what are your thoughts? Any irritating little (or major) issues you've noticed at this point?
What is your rule of thumb for when to run update on a department's-worth of SW computers?

I think I will. I just discovered and resolved the slow-drw-load-time issue w/2019 & went through SP5 update for that...and I'd like design dept to enjoy a break from new functional issues for at least a few more days.
...the vendor who saved everything in 2020 will just have to get a stern scolding and sweat a little while longer. Eventually we'll tell him it's going to be ok.
What kind of advice is this? Are you trying to tell me that SolidWorks may work differently on my own hardware and my own files? Do you think it will behave differently if I have PDM or other add-ins that you do or don't have? Your advice doesn't make seem to use reasonable common sense.

Ken,
From my experiences, yes, maybe, and yes and I have seen it, maybe minor but inconsistencies do exist.
Unless your clients require it or there is a specific feature in 2020 generally speaking SP5 is the safest way to go and just do it once a year.
This makes probably even more sense with a department full of seats.
True true....deep down, I know this makes sense...but it's new, and that probably means there are some shiny things inside that I need to be using.
I personally can't afford to deal with the cost-risk of a brand new car purchase.... installing latest SW SP is the next best thing.
Well it's up to you Jason, I take it that you are in charge of when it will be implemented and how at your workplace. Therefore your company are relying on you to make decisions that are correct for the company.
Best bet first call is review what's new in 2020, easily enough done. Solidworks have data on that. Next look at how long it takes to load on 2020 and get someone running. Then what have you got in place in case something doesn't work correctly and you need to revert back to 2019. Finally consider the time updating the software for new SP's through the year, I assume you will want to be at least on SP4 or SP5 in the end.
