I was cleaning up some wires that were off our grid. In the process they were temporarily disconnected from their component. NOW ALL THOSE WIRE ASSOCIATIONS ARE GONE.

Lynne, you're absolutely right - if your only cable association is in a multiline schematic, removing one endpoint from that line (making it a wire style 'stub', rather than a wire, since 'wires' need to be connected on both sides), you'll lose your cable association.
You can always CTRL+Z / Undo to undo the move/deletion/etc and restore those associations - that'd be my tip.
A better tip is to stay on Snap with multiline's - this is a huge 'best practice' from our training and peaks out in Title Blocks, Project Templates, symbol creation... everywhere.
As an aside, if you have a single-line representation of that cable (and it matches/is correctly done) as well as the multiline, then connecting them back up will restore the association automatically. Otherwise you're right back to selecting all the wires on your mutliline and [Associate Cable Core], but if you do them all at once rather than selecting one at a time, it's not awful.
