To my knowledge there isn't really document templates in Composer.
There is default document properties and default import settings that you can modify so that files are always imported and set up in the same way.
Then there is the various "styles" which are effectively templates for the different types of actors in the document, some can be set as default and will be automatically applied but sometimes this will meant that sometime the wrong style might be applied to an actor you didn't want it to.
I usually just select the actor i want to apply a style to and then go to the styles tab and select the one I want (only the styles that can be applies to the selected actor are available).
