I sent an edrawing file to a Inspection Colleague, who is responsible for QC of incoming machined parts. The QC guy do not have licensed Solidworks. Now as a workflow he needs to add additional inspection dimensions and hide some (not all) dimensions for QC process form and clarity, but I found he can only hide layers but not specific dimensions. Do edrawing program provide hiding tool for dimensions?

I do not think that this is possible. You can try saving an eDrawings file where no dimensions exist and the user can add these in manually. If you know there are certain dimensions that he needs you could also place these dimensions in one layer and the ones you question into another layer.
