How can I set the section view so I only see a certain part of the drawing rather than the entire drawing?

not sure what you're after. but could be section depth....
The slice section feature is what I believe I need. Can you help with how that is used.

I highlighted it, when you have the section view selected, you check the box "Slice Section". Then you can change the scale of the section to make it bigger if needed.
Just shorten the arrows in the section.

Then after you "Slice Section" and dimension accordingly, you can draw a circle around the sliced section, and click "crop view" and it will remove the other Sliced Section of the section view, and only show the one section.

In order, these are the steps:
Insert your model, select section view, choose section area.
With the section view selected, check "Slice Section"
Draw circle around sectioned view you want on the print, select "Crop View"
Then you can right-click, and "hide dimension lines" to hide the halves of the dimension lines you don't need visible. (If needed)

Also, 2020 now has Removed Sections, which allows you to create this kind of section view per ASME standard with just a few of clicks within a single workflow.
