Everytime I do a closed sketch it fills in the background with a solid grey color.
Can anyone tell me why this is ?
What does it mean ?
How do I stop it ?

I remember when this feature was introduced the icon was added to the Command Manager for some users, and for some it wasn't, but you can add it in. Right-click on the ribbon at the top of your SW screen and choose "Customize..."
That will open the "Customize" dialog box. Go to the "Commands" tab, choose the "Sketch" row, then click on the "Shaded Sketch Contours" icon, drag it onto your Sketch Command Manager, and drop it.
Click the OK button. Now when you're in a sketch you can click on that icon to turn the feature on and off.
SW "shade" the profile so user know its closed.
Don't know if it can be turn off.

First sketch is filled but second is not. Many times I get more filled shade as I go.
