This works. Leaves the sketch not fully defined when I erase the other half of it, but it gets the job done.

Rather than deleting the original converted entities, could you turn them to construction geometry?
EDIT - if you convert to construction geometry, you can use composite curve on the 3D sketch which will turn just the mirror in to a curve. This will leave you with your original curve and the mirrored curve, referenced to each other.
What is the application of the curve/3D sketch?

Don't see why converting to construction lines wouldn't work!
I use them to locate scribe lines on a cnc part. Solidworks doesn't play very nice with small cuts across a surface.
And curves also get saved into parasolids, it's a good way to give instructions to locating them to our cnc programmer as well.
