With a mirrored featured, how does one fill in a shelled out face to one of the two sides?

Post a similar sample file at the juncture in question.
If the part is symmetrical then I would build only half or cut it in half and then mirror the body
You could use delete face and patch
I figured it out on my own. It's quite simple...
- move the 'mirror' feature to above the 'shell' feature
- in mirror feature: deselect/uncheck 'merge solids', this creates 2 solid bodies
- go into Direct Editing: select COMBINE, under Operation Type - ADD
