I`m wondering if there is anyone who knows how Solidwork 2019 would run on a RTX2080 card.
The Laptop I'm looking at is:
Acer Predator Triton 500 15,6" FHD matt
144Hz G-SYNC,GeForce RTX2080,Core i7-9750H,32GB RAM,1TB PCIe SSD,W10H
I don't know that any GeForce graphics cards are certified for use with SolidWorks. Sometimes you can get OK results with non-certified cards, but it's a risk to you'd have to assume.

The only thing you are missing from your question is the important part: What are you trying to do with SolidWorks?
SOLIDWORKS WILL RUN ON JUST ABOUT ANY PC OR WINDOWS LAPTOP.
What it won't do is run massive assemblies, complex parts, complex imports, difficult simulation, etc, etc.
IT ALL DEPENDS ON WHAT YOU ARE PLANNING ON DOING WITH IT.

My work will be with larger assembles in SW, and multiple assemblies in a “Drive Works” like program, at the same time I need the laptop to do high renderings in Visualize among other rendering programs like Keyshot, V-ray (Exported from SW through a different program though) etc. I guess I need the best from both worlds, CPU & GPU.
So I’m looking for the “best” choice of laptop (It has to be a laptop due to the work I’m doing) for the best Solidworks performance, and for the best rendering performance.
with 15" screen?
I use 15 " for traveling reasons, mostly working on double 27" screens, home and at office.
I worked for several years off a laptop. Make sure it's a workstation-class laptop. In which case, it can be faster than a normal workstation as the architecture of a laptop can provide better performance than a box due to the shorter bus lengths.
I was working with huge assemblies and lots of simulation just fine.
What Dave said below is good as well. Make sure you've got the best video card you can afford and that it is approved by SolidWorks.
Win 10 pro as well.
Get something with a certified Quadro card to get the best SW / Visualize stability and performance. If the graphics chip has 4Gb of RAM for itself then you can make the most of SW Visualize.
Also make sure you get something with Windows 10 Pro, not Home (assuming W10H in your initial specs was meaning 'Home').

What is it with these ridiculous laptops? Buy two average workstations and put a P2000 in one of them, it's approx the same price.
I own a beefy gaming laptop from 2014 that I bought then for whenever I was traveling. It was rubbish to work on compared to my workstation, but sure it handled solidworks fine for meetings. If I could go back in time though I would have bought a lightweight ultrabook instead, this thing is such a heavy pos.
