Mastering Solidworks by Mathew Lombard is very good (previous books were called Soldiworks Bible)
I would suggest you to take SolidWorks training program from SolidWorks VAR (Value Added Reseller).
During training, they will give you the SolidWorks Manuals.
Also there are so many online contents available eg: MySolidWorks.com,You tube videos etc and even you can find help documents inside Solidworks software.

Books, seems like this has been asked once or twice. There are some good books out there. There are books that can teach some of the basics of part and assembly construction. From there you need a project that will get students to really use and manipulate those basics. Then there is the challenge of making a part using non standard commands. The more that you challenge them the better they will be.
It is up to you to decide. I prefer audiovisual aid therefore I prefer Udemy, MySolidworks and authentic YouTube videos.
