How does SW use the Body-Move/Copy feature to mirror a part? Keep in mind, I'm not asking how to get SW to do it, I want to know how it does it so I can edit/recreate it without the original assembly (if possible).
Sorry... Body-Move/Copy features can't mirror a part. You are going to have to explain a lot better what you want to do.
I'm confused. The "Move/Copy Body" feature exists in Part files. Why are you talking about an original Assembly? Are you talking about the "Mirror Component" feature in Assemblies, with the option selected to create an opposite hand version of the Part being mirrored?
Yes. It creates a Body-Move/Copy feature in the original part to create the mirror. I use Move/Copy Body in direct editing all the time, but that doesn't have the ability to mirror a part - seems like it would be a nice feature.
I'm not sure this what you want, but couldn't you just model your entire part as desired and then mirror the entire part (in the part file)? Use a configuration for each hand by supressing the mirror feature?
I could, but the nice thing about this feature is that when creating the mirrored parts drawing, you just change configuration the drawing views are looking at and the dimensions still stay attached (really nice). The Mirror feature doesn't work that way.

Or of course you can always just use the "Mirror" function to mirror any existing bodies within the same Part file.
It can be done but it is a two step process. First you use the mirror part feature with the Break link to original part selected to create a new part. You then copy and paste the Body-Move/Copy feature back into the original model. You may have to edit the feature to re-select the body if it throws and error and if you have a multi-body part you will need to edit the feature and add the other bodies.
