will more ram improve rendering and reduce crashes during rendering?
If your rendering is crashing from lack of RAM then, yes, adding RAM will help. If you haven't tracked the crashing back to a specific source though you may want to hold off on the purchases for now. Have you monitored the RAM usage during rendering? Does it show that RAM usage is used up to within 2.5 GB of the total installed RAM? Are you getting errors citing memory as a particular culprit for the issue? Are you getting any error messages prior to crashing or during crashing that you want to post into this thread?
In addition to what Ryan Dark said, if you could post your computer specs (including graphics card) it might help answer your question.

assemblies with up to 500 components including hardware
You may have too little RAM since 8 GB is not a ton these days. You may want to try creating a render and monitor the Windows Task Manager for RAM usage and see what RAM usage is when you crash.
I'm running at 12.2 GB of 32 GB installed right now and SOLIDWORKS isn't even open right now.
