There are a couple of things you can do. You could bring all of the curves on your helmet to a point at the top. That works sometimes, but also sometimes causes some problems. You could finish it off with the Fill feature. That is probably the best way.

Based on your original question (I'm only in 08) it sounds like you are trying to model this with one feature. Only for the simplest models would this be recommended. Try to cut your model into logical areas. For Matt's model above you might model the brim and ear protectors as different features. I used to work in the military helmet industry and the parts would have around 100 features. Good luck.
