There is no special trick involved in installation multiple versions but just keep different folders/files/templates for each version.
Here is what I've on my machine:
This was nothing gets messed up and I'm using different versions on same machine.

- The toolbox data folder is named on the SW version. For e.g. for 2018, it is named as SOLIDWORKS Data 2018 and for 2019 version it is named as SOLIDWORKS Data 2019.

Although my SW2019 installation is working perfectly fine alongside my SW2018, by default the installation (in my instance anyway) did not name it "SOLIDWORKS Corp 2019", it just named it "SOLIDWORKS Corp". However SW2018 is indeed named "SOLIDWORKS Corp 2018"
Just as a side note, it also only named "SOLIDWORKS Data 2019" as "SOLIDWORKS data" ....
I wonder if anyone else has seen this????

I assume SW did this because your SW2018 folders were named with 2018 so SW used the default which is not to include the version year (did you or SW add the 2018). I have six versions of SW installed on my computer and I let SW name the folders. Notice only the first one does not have a version after it for SolidWorks Corp and SolidWorks Data does not have the version at all.

I've my installation setup same way but I've also renamed the data folder as well.
SOLIDWORKS installation manager won't rename the folder but it would use the default folder/location as Solid Air has mentioned. For installation it uses SOLIDWORKS Corp and for data folder it uses SOLIDWORKS data. So you've to rename/select the desired folders during installation.

SW2018 was preloaded when I got the lappy so I'm guessing they must have renamed the files............
What issues am I going to have if I was to rename those folders now? Where else would they be referenced that would have to be changed also? Or, am I better off just leaving things as they are since they seems to be working without issue?

Well only renaming folders may not help as registry and some other window settings might have to be changed as well. So either leave it as it is OR uninstall, remove the folder and reinstall to desired location.

As Deepak Gupta stated you could but take it from someone who has tried, DON'T. There is nothing wrong with the way it is right now as long as everything is working well.
I also have SW2014 to SW2019 installed, using Deepak's method.
When installing the next release SolidWorks looks at the previous version for your settings so here are some other things to check:
1. Under System Options, check File Locations. "Edit All" is a good way to edit affected paths to change "2018" to "2019"
2. There is a thread about "crusty old templates". Reusing drawing templates seems file, but edit you sheet format for each drawing template and save in your 2019 directory, then resave your template.
3. If you use Property Tab Builder, open and resave your PTB files. Then, open your part, assembly & drawing templates and point to your 2019 folder.
