Why does my part get rendered like this in assemblies?Maybe some kind of low quality setting, think I have tried everything...

It looks like you have two surfaces in contact with one another. If you add a small gap between them the problem should go away. Between 0.1 and 0.5mm generally works for me depending on the scale of the part/assembly.
Yes, that is also what it looks like to me, and the part does have a coincident mate but only to the surface on the other side of the part. I tried moving it away but it still happens. And it's not the only part. I fiddled a lot with the quality settings to make the system run faster with larger assemblies, but can't figure out where I went too far.
Do you have this option turned on?

It was on, just tried to see if it made a difference off, it didn't, now it's on again... :-)
It seems like it, in general, has a hard time rendering faces close to each other, it didn't use to be like this.
