No it doesn't. he creates a parting line and shutoff surfaces and then isolates one of the cavity/core surfaces which is automatically colored red or green when done properly. look at his feature tree, draft is never added. He is cleaning up an imported part similar to a mold maker receiving a customer file.
watch what happens with the molding folders once you step your way through a part split.
If shutoff surfaces are created with the built in tool, SW will automatically create 2 copies and put one in each folder (core/cavity) to be knit with the surrounding geometry and form a solid. they are mutually shared or "contact" surfaces between mold halves similar to the outer parting-line surface. They are identical so when you have your cavity & core surfaces shown, they overlap and give the appearance of a exhibiting both colors. it is just a graphical illusion of sorts. You can create an example by offsetting(copy) a solid surface to 0.00 and then changing its color.
