I have a rather large (124 item) list that I would like to use to auto populate 2 additional text fields. Each item in the initial list only has 1 possible option in each of the two subsequent lists, so I would like to set up either an excel file or text file and auto-populate based on the first selection? I'll need them to be separate fields so that I can export them out, so concatenating them all isn't a workable solution either (at least at this time). Any help would be greatly appreciated.

There are a few ways to do this. You can create your Text file, and make a custom property that each file template is going to reference.
This is an example of te one I developed for my company for drawing files all but the date fields are drop downs to editable lists captured by custom property tabs from the text files.:
