Any reflective appearance will always reflect colors from the environment. So your white stuff will naturally look less white. I'm stating the obvious to some degree, and I guess you understand this already as you mentioned increasing the brightness.
So if using a more "white" environment isn't an option (White Panel T's, or SW soft spot, soft box, etc.) then a "trick" is to actually switch the appearance type to Paint. Use clearcoat amount to control amount of reflectivity and clearcoat roughness to control how shiny/rough it looks.
I have this same problem quite often. We make "Whiteboards" and simulating those in visualize can be rough sometimes. I usually bump up environment brightness to 2 and have to adjust everything else accordingly. Eventually I developed my own library of Custom Colors that I use regularly that are already adjusted for the extra brightness.
I too make many changes in solidworks and then re-import. This can be very dangerous as a simple change in body or color can mess visualize up big time. I always use "Export advanced" from the Solidworks tab. On occasion I will save all Scenes, Cameras, and appearances to a folder specific to that project and then have to start over by re-importing the new geometry.
Working with Display States or hidden bodies usually confuses visualize. You have to manually find the part in the Visualize tree and Hide it.
I have made habit of coloring Solidworks bodies basic colors, this removes confusion from importing multiple bodies of the same color.
My fast, no thrills trick is to make the background gradient and use greys. light grey on top and darker grey at bottom

with regards to the part on part look when updating from SOLIDWORKS , this usually happens if you group in visualize using the Merge Parts option because it makes a body in Visualize that is not Recognized in SOLIDWORKS.
because of this when re-importing from SOLIDWORKS it recreates the body. the best way to avoid this issues is to use the "Create new Group" option instead of the "Merge Part" option.
you may also experience this if you do any part splitting also.
